BBQ chicken pizza is one of those takeaway orders everyone loves and nobody makes at home. The trick to ours is that the base is not tomato sauce at all, it is our smoky Beef & Rib Sauce straight from the jar, with chicken, bacon, red onion and mozzarella on top and more warmed sauce drizzled over at the end. Pull the meat from a barbecue chook on the way home and this goes from fridge to table in 20 minutes.
Ingredients
2 pizza bases, or 500g pizza dough
300g cooked chicken breast, diced (barbecue chook works a treat)
150g bacon, diced
1 small red onion, thinly sliced
2 cups grated mozzarella
A handful rocket, to serve
1 Beef & Rib Sauce jar

Preheat the oven to 220C with your tray or pizza stone inside for 10 minutes.

Spread a generous layer of Beef & Rib Sauce over each base, right to the crust, about a third of the jar per pizza.

Scatter over the mozzarella, then the chicken, bacon & red onion.

Slide the pizzas onto the hot tray & bake for 12-15 minutes, until golden & bubbling.

Heat the remaining Beef & Rib Sauce in a small sauce pan.

Drizzle the warm sauce over the hot pizzas, scatter with rocket & serve.
Recipe Notes
For a spicy version, swap the base sauce for Chipotle Pineapple & Lime Sauce and keep everything else the same. Top the pizzas up to a few hours ahead, keep covered in the fridge, and bake straight from cold onto the hot tray.
