Pork ribs, salt and one jar. The racks go low and slow in foil until tender, then get brushed with our Chipotle Pineapple & Lime Sauce and blasted until sticky and glossy. Sweet pineapple up front, lime behind it and a gentle chipotle warmth that arrives late. The sauce goes on straight from the jar with nothing added, so the only thing to watch is the glaze, pineapple sugars caramelise quickly.
Ingredients
2 racks pork ribs (about 2kg), from your favourite butcher
2 teaspoons salt
1 Chipotle Pineapple & Lime Sauce jar

Preheat the oven to 160C. Peel the thin membrane from the bone side of each rack & season the ribs all over with salt.

Wrap each rack snugly in foil, lay on a tray & bake for about 2 hours, until the meat has pulled back from the bone tips.

Turn the oven up to 200C. Unwrap the racks & brush generously with Chipotle Pineapple & Lime Sauce, straight from the jar.

Return to the oven for 10-15 minutes, until the glaze bubbles & turns sticky.

Brush with more sauce as they come out & rest for 5 minutes.

Cut between the bones & serve with plenty of napkins.
Recipe Notes
The sauce needs nothing added to it, no honey, no extra chilli. Make them ahead: do the slow foil stage earlier in the day, hold the racks in the fridge, then glaze and finish in a hot oven just before serving. Watch the glaze closely, pineapple sugars caramelise quickly.
